Beer Brewing – Join us for a steamy, fragrant morning/afternoon of mashing grains, boiling worts and hops, and delightful aromas—all in the name of making many people’s favourite beverage, beer! This workshop will explore the process of all-grain brewing. Beginning with milled grains and water, participants will proceed through all the steps for making a beer completely from scratch. Everyone will brew their own batch of beer on equipment that can be found in most home kitchens.
Butchery – Bring your team out for a hands-on, primal experience like no other! In this workshop, you will learn how to break the hog into ‘primals’, which are the first cuts that represent the largest portions of the animal. This is followed by the ‘retail cuts’ which include the shoulder (boston and picnic), loin (chops and loin roasts), belly (bacon, pancetta), leg (ham, proccuttio) and finally the head (headcheese, guanciale). Your team will leave with all the pork required to have the best BBQ’s in town!
Canning – Explore the art of canning in this hands-on and interactive workshop. Learn to simply and safely stock your pantry with beautiful, delicious treats to enjoy long after the season has passed. Your team members will make, taste and take home jars of pickles, jams or jellies.
DIY Personal Care Products – Come enjoy a relaxing couple of hours learning how to make healthy and inexpensive body care products. During the workshop, you will get to make all natural deodorant, lip balm, shampoo and face moisturizer. Your team members will leave with these four products that are perfect for themselves, their family and make a wonderful gifts.
Fermenting – Join us for a tasty, hands-on experience of fermenting various products such as sauerkraut, kombucha or kimchee! You will learn the history and uses of these amazing super foods and how to properly prepare ferments in a hands-on method. Get to know your coworkers better while learning to create these delicious and nutritious fermented treats to take home with you!
Foraging for Wild Edibles – Come enjoy the wonders of nature while foraging for wild edibles on a late morning/early afternoon hike! Whether you’re keen to learn about nature, want to be more self-reliant or perhaps lack a green thumb, foraging is a fantastic window by which to explore the natural world and increase one’s awareness of and respect for its beauty and complexity. Wild foods are very nutritious and often have much higher amounts of minerals and nutrients than their domesticated counterparts. Your team will leave with the knowledge of what’s edible and what’s not in their backyard, as well as a harvest of wild edibles to take home!
Homemade Chèvre Cheese Making – Join us for a hands-on cheese making workshop, where your team will learn about the entire 36 hour chèvre making process. You will also get to make spiced chèvre balls and learn how to spice a Boursin style cheese. Your team members will get to take home fresh spreadable chèvre and a plate of cheese balls to share with their family and friends.
Macrame – Enjoy a morning/afternoon while creating your own beautiful and unique macrame wall hanging! Macrame is making a reappearance in modern homes, giving character and texture to spaces. Inspired by the 70’s fad (and probably seen in your grandmother’s home) it has been revived with a tasteful modern appeal. In this workshop, your team will learn the basic knots and techniques to create a macrame wall hanging that is approximately 10″x 35,” made from 3 strand 3/16″ (5mm) natural un-dyed cotton. Your team members will leave with a finished wall hanging and a mind filled with inspiration!
Native Bees – Join us to explore the fascinating world of wild bees; a non-aggressive, North America native. You will explore the various differences in the species and how to create the best habitat to attract this incredible pollinator in your urban backyard, orchard or farm. By the end of the session, each team member will be bringing home their very own bee house to attract wild bees, as well as the knowledge and expertise to promote a variety of species on their property.
Poultry Butchery – Join us for an engaging workshop where you will learn all you need to know about butchering a bird. Your guide will start by taking you through the basic anatomy of a bird, followed by teaching you various trussing methods and the breakdown of the bird. You will practice trussing, butterflying, spatchcocking, de-boning, making ”supremes’, stuffed legs, breast and wings. At the end of the workshop, your team will go home with fully butchered, fresh, pasture-raised chickens ready for the BBQ!
Sausage Making – Come enjoy a hands-on sausage making experience with a local butcher. We’ll explore all the different facets of sausage making; spice combinations, meat to fat ratios, and proper casing techniques. Your team will go home with fresh sausage, packaged for immediate consumption or the freezer, and the confidence and knowledge to successfully make your own at home.
Sourdough Bread Baking – Join us for a morning or afternoon to explore one of the most ancient human activities, baking bread. We’ll make bread using the traditional sourdough technique! Your team will leave the workshop with a fresh batch of dough to bake the next day, a freshly baked loaf of bread, a healthy and predictable sourdough starter, and the knowledge and confidence needed to make high-quality, rustic, sourdough bread at home.
